Tasty Tuesday: Summer Omelet Recipe!

Please, anything but hamburgers and hotdogs! After a long (and beautiful!) weekend of barbequing, I’m sure everyone could use a break from the recent over-abundance of hamburgers and hotdogs. This refreshing omelet recipe is both light and simple to prepare. The omelet contains delicious zucchini and corn (which you may even have left over from Monday’s barbeque!). This easy recipe only takes 15 minutes to prepare and will provide your body with essential vitamins, minerals, and fiber that will kick-start your body and rejuvenate your mind!

Cooking spray
2/3 cup frozen whole-kernel corn, thawed
1/2 cup chopped zucchini
3 tablespoons chopped green onions
1/4 teaspoon salt, divided
2 tablespoons water
1/4 teaspoon black pepper
3 large egg whites
1 large egg
2 tablespoons shredded smoked Gouda cheese

1. Heat a pan over medium heat. Coat pan with cooking spray.
